Mechanical watches do. Every 3 to 5 years keeps the lubrication fresh and catches small issues early.
Quartz watches mainly just need a battery change every 1 to 3 years. There's no mainspring or gear train to service the same way.
Skipping service on an automatic won't break it immediately. It will shorten its life.
